The Strand Hotel in Sydney/Warrane’s Darlinghurst has completed the final phase of 99-year-old pub’s multi-level redevelopment. Joining the recently opened Strand Bistro, the precinct now houses a 17-room boutique hotel and city-view Rooftop Bar. The unveiling comes as George Gorrow, co-founder of denim brand Ksubi, joins the hotel as Creative Director which has seen Gorrow and team craft a boutique Parisian-styled refuge in the heart of the city’s CBD. Meanwhile, in addition to serving up classic cocktails, The Strand Rooftop will host a series of live entertainment and weekly DJs from Friday to Sunday.

March, the intimate bar and restaurant from two-hatted chef Peter Gunn, has opened next door to its sister restaurant, Ides. The 26-seater sources food from Ides’ kitchen and a wine list from sommelier Hayley McCarthy, with sake and sherry a focus. The menu includes Izakaya-style plates with small items such as pickled cucumbers dressed with two-year-aged soy, sake-steamed Goolwa pipis in yuzu-parsley butter or sweet-and-sour quail. Purin, creme caramel’s Japanese cousin, is paired with peach syrup. At the rear of the venue is Ides’ first private dining room, with seating for 14 people.
